Malcom McMillan
Malcolm McMillan is the Chef de Cuisine at Costa* in downtown Charleston, SC.
Born and raised in Greenville, SC, Malcolm’s first experience in kitchens was as a dishwasher in a small, family-run Italian restaurant. Soon after being promoted to line cook, he found a love for the fast-paced kitchen life and decided to attend the Culinary Institute of the Carolinas at Greenville Tech. Once he had earned his degree, Malcolm found a home as a Sous chef with Restaurant 17 at Hotel Domestique in the foothills of the Upstate.
After 2 years, Malcolm set his sights on Charleston, taking his first job in the city, honing his skills at Malagon Mercado y Taperia under Juan Cassalett. His time in the kitchen there gave him the confidence to move to New York City, where he worked at Wildair in the Lower East Side. Following his time there, he joined the opening team at Cloverhill in Brooklyn Heights, working under Chef Charlie Mitchell. Cloverhill earned a Michelin star in its first year.
Malcolm returned to Charleston in late 2022 to return to Malagon as a as Sous Chef. A year later, he joined the team at Costa. He briefly left Costa to
work under Chef Jason Stanhope at Sullivan’s Fish Camp, then returned to take over as Chef de Cuisine.
When he is not in the kitchen, Malcolm enjoys cycling and spending time with his fiancé, Megan, and dachshund, Pickles.
